Abstract
Childhood obesity in North America has reached epidemic proportions. Factors that continue to lead to such high rates of childhood obesity include low intakes or fruits and vegetables, along with high intakes of energy dense foods that are often not nutrient dense. One of the simplest ways to combat the childhood obesity epidemic is increase the amount of vegetables being eaten by children. Factors influencing vegetable intake in children may include cost or availability, but one of the biggest factors continues to be liking of vegetables.
