Abstract
This project was completed in partnership between Ramsey/Washington Recycling & Energy (R&E) and the University of Minnesota’s Resilient Communities Project (https://rcp.umn.edu/). The goal of this project was to analyze strategies and best practices for collecting food scraps from small businesses, as well as for transporting those food scraps to the preferred recycling facility, providing recommendations for how R&E should prioritize such efforts for maximum impact moving forward. R&E project lead Leigh Behrens collaborated with a team of students in Meghan Stiling’s course BA 3062: Impact Lab in Action to develop a small-business food scraps pilot program implementation guide. Final student report and presentation slides from the project are available.
