When the COVID-19 pandemic hit US shores in early 2020, it widened the already existing inequities in our food systems. Grocery store shelves sat empty, meat processing plants became sites of unchecked spread, and food banks saw miles-long lines of cars. Restaurant workers, truckers, farm laborers, and grocery store stockers were thrust into both the frontlines and the limelight. The food system showed us some of the starkest inequities in our society.
