Dr. Katie Loth and Dr. Jennifer Linde were the faculty advisers.This project was completed as part of a year-long partnership between Scott County and the University of Minnesota’s Resilient Communities Project (http://www.rcp.umn.edu). The goal of this project was to explore options for creating an edible landscape in Scott County. Scott County project leads Jayme Carlson and Lisa Brodsky collaborated with graduate students, Jenna Yeakle and Kristine Mcintyre, as part of their Master of Public Health Culminating Experience. Jenna Yeakle worked with her faculty adviser, Dr. Jennifer Linde, to identify community engagement strategies while Kristine Mcintyre worked with her faculty adviser, Dr. Katie Loth, to identify how the edible landscape could meet the nutritional needs of the community.
